Casserole of Liver


1 lb. beef or calves liver, cut in pieces
¼ c. fat or salad oil
6 small onions, chopped
1 c. cubed carrots
1 c. cubed potatoes
Dash pepper
1 c. canned tomatoes
½ c. water

Brown liver in hot fat. Remove liver. Brown onions, carrots, and potatoes. Place liver and vegetables in greased casserole. Season. Pour over tomatoes and water. Cover and bake 350° for 1 hour.
