Ruby Chicken

3 fryers - 2 ½ lb. each
1 T. salt
¼ c. vegetable oil
3 med. Onions, chopped (1 ½ c.)
1 ½ t. cinnamon
1 ½ t. ginger
1 T. grated orange rind
2 c. orange juice
3 T. lemon juice
2 c. (1# each) whole cranberry sauce

Sprinkle chicken with salt. Brown on one side in hot oil. Add onions. Brown on second side. Sprinkle on spices. Add orange rind and juice. Lemon too. Cover simmer.20 minutes. Add cranberry sauce. Simmer covered 15 minutes. Bake in oven until tender. Chicken liquid first if you wish. Freeze and then do oven part if you wish later. 350°. (If frozen, 350° for 2 hours. Turn pieces once.)
