Susan’s Salami


3 lbs. cheap hamburger
2 T. curing salt
1 t. peppercorns
1 t. mustard seed (opt.)
3 t. liquid smoke (opt.)
1 t. garlic powder

Roll in 1 lb. rolls. Poke 5 or 6 holes. Chill 12 hours. Simmer boil 1 hour. Cool and rewrap in foil. Chill 12 hours. May be frozen.
